Okra Stifado Recipe | Μπάμιες Στιφάδο is a hearty and wholesome dish part of Christine’s from Kali Orexi Melbourne wonderful “Meri Month of May” campaign, which was shared with us by Fofi Nikolaidis from Kalamata.
"Greeks love okra! In the Southern Peloponnese, in the region of Kalamata, okra dishes are very popular. We cook okra in many different ways. The most popular of all is the Okra Stifado and that is why we choose it to share it for the "Meri of Month". Okra Stifado has an exceptional rich aromatic flavour and is one of the most tasty Greek vegetarian dishes. Okra is one of the most healthy vegetables and we love it because it is rich in vitamin C and collagen, very wholesome! Our family's Okra Stifado recipe is very simple and it is ready in 30 minutes. INGREDIENTS:
- 1/2 cup Ladi Biosas organic extra virgin olive oil
- 500g shallot onions
- 500g cherry tomatoes
- 2 garlic cloves, finely chopped
- 450g okra
- 1 teaspoon salt
- 1 teaspoon black pepper - Salt Odyssey
- 1 teaspoon dry rosemary
- 2 bay leaves
- 1/2 teaspoon cinnamon
METHOD:
Heat the Ladi Biosas organic extra virgin olive oil in a large pot.
Add onions, tomatoes, okra, salt, pepper, rosemary, bay leaves and cinnamon. Bring to a boil, then lower heat and cook for 30 minutes until the sauce thickens.
Serve right away with some seasonal salad and plenty of country style Greek crusty bread.
