Orange Cake with Olive Oil Recipe from Kalamata, Greece

In the South of Peloponnese many cakes and pastries are made with the flavour of oranges and olive oil. This recipe is over 100 years old and passed down from our grandmother. She was always baking all her cakes and pastries by using extra virgin olive oil as it gives an extra green and fresh flavour to the recipes." Fofi Nikolaidis.

Ingredients

  • 2 cups of all purpose flour
  • 1 cup sugar
  • 3 eggs
  • 1 cup Ladi Biosas organic premium EVOO
  • 1 cup orange juice
  • Zest of a lemon or orange
  • 1 sachet of baking powder (add it into the flour)
  • 1 spoon vanilla extract
  • Icing sugar to sprinkle on top of the cake

Method

In a large bowl, stir the sugar with the Ladi Biosas organic premium EVOO. You may use a mixer. Once the mixture is homogenised, add the eggs one by one.

Wait for one to mix well and then add the next. Then add the vanilla and after slowly add the the flour with the baking powder. Now add the orange juice and the zest of a lemon or orange. Stir the mixture until well combined.

Next, we take a cake pan in which we have add a spoon of olive oil to cover bottom and sides, and we pour in our mixture. Place it in a preheated oven at 180 ° C for 35-40 '.

Once the cake has risen and gets a little colour, check it with a toothpick to see if it is done and take it out of the oven. Leave it to cool. Sprinkle with powdered sugar and it is ready to enjoy. Kali Orexi!
