Fig marmalade & walnut biscuits by The Greek Vegetarian

Our Adelaide friend Helen from The Greek Vegetarian loves baking as much as we do! So after trying our delicious homemade fresh fig marmalade she just couldn’t resist, but bake with it and create something festively delicious…

Fig Marmalade & Walnut Biscuits!

For all those who know what a jammy dodger is, this is Helen’s Greek version of it, but a lot nicer! And all you need are the following:

Ingredients

250g butter, softened powdered

150g caster sugar 

1 egg yolk

1 tsp vanilla extract

300g AP flour all 

50g crushed walnuts 

2 tblsp ouzo (optional)

Fresh fig marmalade - Kumilio 

 

Method 

Cream the butter and icing sugar together with an electric mixer until light and fluffy.

Add the egg yolk and vanilla and mix to combine well. Add in the ouzo if you are using it here.

Mix in the flour and walnuts until it makes a soft dough. It will be soft, but shouldn’t be too sticky to manage. If it is, mix in another tablespoon of flour.

Chill the dough, wrapped in clingfilm, in the fridge for at least 30 minutes. It may seem like this dough will never be pliable, but it will be after it has chilled.

Heat the oven to 180C fan and Line a couple of baking tray with parchment paper.

Roll half of the dough out (keep the other half in the fridge) in between 2 pieces of parchment paper to about 1 cm thick.

Cut out rounds with your favourite round cookie cutter. For half of the rounds, cut another, smaller shape in the middle to form a window. Re-roll any trimmings and make an equal amount of plain and windowed biscuits.

Place the biscuits on the baking tray and bake for 8-10 minutes. Allow the biscuits to cool on the tray. The hardest part of this recipe is moving the biscuits to the tray!

Use an offset spatula to carefully move the biscuits onto the tray.
Don’t overtake the biscuits, the smaller you cut them - the quicker they will cook.

Sandwich a small dollop of jam between the plain and windowed biscuits and then dust with sieved powdered icing sugar.
