Our Australian "cooking" road trip continues just in time for Valentine's Day, but with a modern alcoholic twist this time.

When Maria and her talented team at Aristotle's restaurant in Neutral Bay tried our flavoured extra virgin olive oil, Enigma, they knew that it was something unique and extraordinary. So, they let their creativity and imagination take over and create a magnificent cocktail, El Greco's Enigma!

A creamy, luscious and aromatic cocktail that has real depth of flavour that unfolds in different layers as you slowly sip it... The perfect aperitif to start and finish a gourmet degustation, and an ideal celebratory tipple for your special Valentine!

El Greco’s Enigma 1

30ml Votanikon Gin

30ml Dom Benedictine

15ml lemon juice

7.5ml sugar syrup

1 egg white

15ml Enigma flavoured olive oil

Method

Mix the gin, Dom Benedictine and lemon juice in a shaker.

Add the remaining ingredients and dry shake.

Add ice and shake again until smooth.

Double strain into a chilled martini glass.

Garnish with a few drops of Enigma olive oil.

El Greco’s Enigma 2

30ml Votanikon Gin

30ml Licor 43

15ml lemon juice

7.5ml sugar syrup

1 egg white

15ml Enigma flavoured olive oil

Method

Mix the gin, Licor 43 and lemon juice in a shaker.

Add the remaining ingredients and dry shake.

Add ice and shake again until smooth.

Double strain into a chilled martini glass.

Garnish with a few drops of Enigma olive oil.
