Banana & Coffee Cake Recipe

Who doesn’t love banana cake?! A classic and top favourite in most countries around the globe with its fluffy, moist and velvety banana texture. This recipe however has an aromatic flavour of coffee that elevates the beloved banana bread to a whole new level. There are 2 flavours that work perfectly with it, Greek coffee with chestnut or with cardamom, you can just take your pick. We also used no added sugar chocolate to make it a little bit healthier, so we don't have to stop on one slice only!

Preheat a fan forced oven at 180C.

In a bowl crush the bananas roughly and add the eggs, mix well.

Roughly chop the no sugar chocolate and mix in another bowl with the chopped walnuts. Add the flour, soda, sea salt, vanilla essence, coffee and then mix well.

Then pour the bananas and eggs mixture into the bowl with the chocolate and the remaining ingredients and mix well until you have a well blended consistency.

Lightly butter a rectangular baking dish aprox 10cm x 30cm and pour the mixture in it. Spread the mixture evenly across the dish.

Bake in the preheated oven for 45-60mins. Check the cake at 45mins by piercing a knife in the middle, if it comes out clean, then it is ready, if not continue baking for a bit longer.

You can decorate the top with frosting, seeds or whatever takes your fancy! 

Cut it in slices, lightly butter it and serve with either Nektar espresso coffee or traditional Greek coffee and enjoy!
